We love Peets Coffee, but we are currently living in England where there are no Peets... :( We tend to bring a pound or two back with us each time we visit the states, but feel like we go through it too quick as we worry it will go bad. What is the best way to help beans last so we can enjoy them over longer periods?

Thank you very much for your inquiry. There are several steps you can take to keep your coffee fresh longer.
The single most important thing is to buy whole beans only. As soon as you grind coffee beans, their flavor is released, so the shorter the time between grinding and brewing, the better.
Next, always store the beans so that they're protected from air, heat, light, and moisture. An airtight ceramic container works very well, but you can even use a glass one, as long as you put the container inside a cupboard so that the beans aren't exposed to light.
Some people like to keep their coffee beans in the freezer. This is fine, as long as you don't take the coffee in and out of the freezer on a daily basis. It's best to keep a week's worth of coffee in an airtight container at room temperature, and replenish it as necessary from the freezer supply. Taking coffee in and out of the freezer will allow moisture to get into it.
